You can make them quickly and they fit any occasion. Mushroom muffins can be an ideal snack or a tasty breakfast.
Ingredients (8 muffins)
- ½ tablespoon coconut oil
- ½ onion
- 100 g champignon mushrooms
- 2 eggs
- 100 ml water
- 80 g oat flour
- 1 teaspoon Himalayan salt
- ½ teaspoon ground pepper
- 80 g low-fat cheese
Instructions
Preheat the oven to 180°C.
Peel the onions and chop them finely, then clean the mushrooms and cut them into slices. Heat the coconut oil in a pan and sweat the onions until translucent, then add the sliced mushrooms.
Beat the eggs and add water, then sift the flour, salt and pepper into the beaten eggs. Grate the cheese and save a little, then add the rest to the batter together with the fried onions and mushrooms. Divide the batter into silicone muffin forms and sprinkle the rest of the grated cheese on top.
Bake the muffins in the preheated oven for 15 minutes.
