Brașov roast is a popular dish originally made from pork, beef, or even lamb. Its origin is unclear, although it is certain that it was not first made in Brașov. In fact, it’s like a ragout or stew which has several versions, for example, it’s also made with couscous. This time, we’ve made it with potatoes and, of course, we’ve brought you a meat-free recipe.
Ingredients
- ½ kg oyster mushrooms
- oil
- 1 small onion
- salt, pepper, paprika
- 1 dl water
- a fistful of peas
- 2-3 pcs of potato
Put the potatoes to cook with their skins on, meanwhile wash the oyster mushrooms and thinly slice them, then fry them in oil in a high pan. While stirring continuously, add salt, pepper and paprika. Pour a little water over it, cut and add the onion, stir, and from time to time you can replace the juice with a little more water. Sprinkle in the green peas and simmer until done in about ten minutes, so that no juice remains. Peel the boiled potatoes, dice them, fry them in a pan in a little oil until golden brown, then stir them into the mushroom-onion mixture. Serve with green spices on top – oregano, parsley, rosemary or thyme.
