We love mushrooms not only because they are healthy and filling, but also because they are incredibly versatile and can be used to make amazing warm breakfasts whenever we have more time in the morning.
Here are some of our favourite mushroom breakfast ideas that each member of your family will love.
1. Mushroom omelette
Ingredients (for 2 servings)
- 4 eggs
- 100 g champignon mushrooms
- 1 small onion
- 3 tablespoons olive oil
- 2 tablespoons milk
- 1-2 cloves garlic
- 1 handful grated cheese
- salt and pepper to taste
- chopped parsley
- chopped chives
Instructions
Clean the mushrooms and cut them into thick slices.
Heat 1 tablespoon of olive oil in a large pan and fry the onions until they start to soften.
Add the mushrooms and cook for a few minutes, add the garlic and cook for five more minutes.
Stir in the parsley, season with salt and pepper and remove from the heat.
In a bowl, beat the eggs with the milk, salt, pepper and chives.
Heat a little oil in a pan and pour in the eggs.
As soon as the eggs start to cook on the bottom, add the mushrooms and cheese, fold the omelette and cook to taste.
2. Mushroom grilled sandwich
Ingredients (for 2 servings)
- 200 g champignon mushrooms
- 6-8 slices of bread
- 1 small onion
- olive oil or butter
- 1-2 cloves garlic
- oregano
- salt and pepper to taste
- chopped parsley
Instructions
Clean and chop the mushrooms.
Heat 1 tablespoon of olive oil or butter in a pan.
Sauté the garlic, then add the chopped onion and sweat until translucent.
Add the chopped mushrooms and cook over a low heat until the water evaporates, then add the dried oregano, salt, pepper and chopped parsley.
Mix well and remove from the heat.
Spread the mushroom filling between two slices of bread. You can also add cheese.
Fry in a pan with a little butter on both sides until crispy and golden.
3. English breakfast
