Sometimes we can prepare delicious and filling meals from the simplest ingredients, without necessarily using meat.
Ingredients
- 300-350 g macaroni or spaghetti
- salt
- 100 g bacon
- 250 g champignon mushrooms
- 1 medium zucchini
- 1 bunch of spring onions (white part)
- 2 cloves of garlic
- 6 branches of thyme
- 150 g cherry tomatoes
- 400 g chopped tomatoes
- 1 handful of basil leaves (extra for serving)
- grated parmesan (for serving)
Instructions
Boil the pasta in saltwater and drain it.
While the pasta is boiling, cut the bacon into cubes and melt the fat in a hot pan. Wash and slice the mushrooms and the zucchini, add them to the bacon and fry for a few minutes. Add the finely chopped garlic and spring onion, thyme leaves, cherry tomatoes, and salt, then pour in the chopped tomatoes.
Let simmer, then add in the chopped basil leaves and the pasta. You can add a little pasta water for a creamier texture.
Serve with grated parmesan and fresh basil leaves.
