This one-pot meal is the perfect refutation of the statement that meat is a mandatory ingredient for tarragon ragouts. Real Transylvanian flavors return in this vegetarian dish made from brown champignons and completed with lots of tasty vegetables, which you can prepare for lunch or even dinner.
Ingredients
- 150 dkg of brown champignons
- 2 onions
- ½ dl of oil
- 1 carrot
- 1 parsley root
- 1 celery
- 1 clove of garlic
- 1 tablespoon of ground paprika
- tarragon
- ground cumin
- salt
- pepper
- herbs to taste
For the dumplings:
- 1 egg
- 3-4 dkg of butter
- flour
- salt
Sauté the chopped onion in hot oil, then add the chopped garlic and a little water and steam it with the diced vegetables, mushrooms, spices. Pour water over it, add the finely chopped tarragon, and boil it. For dumplings, mix the ingredients in a bowl, add as much flour as needed. Cut the dumplings with a spoon and add them to the hot soup. When serving, sprinkle the top of the soup with fresh herbs, for example lovage, parsley. We can serve it with sour cream.
