Today, on World Vegan Day, we’ve brought you a tasty vegan mushroom cream soup recipe.
Ingredients (for 4 servings)
- 500 g champignon mushrooms
- 1 onion
- 2 cloves garlic
- 5-6 branches of thyme
- salt and pepper to taste
- 600 ml water
- 2 tablespoons oil
- walnuts for garnish
Instructions
Dice the onions and sweat them in a pot with 2 tablespoons of oil until translucent. Then add the minced garlic and mushrooms and fry over high heat, stirring constantly.
Once fried, add the water, salt and pepper to taste, add the thyme and cook under the lid for 10-15 minutes.
Once the soup is cooked, puree it with a hand blender until creamy.
Serve with walnuts, cream and fried mushrooms.
